I'll start with my award winners
Revenge of Boris 2017 - A Russian Imperial Stout that I've brewed every January since 2015, with the intent to have a vertical tasting of 2015 through 2020 versions. This particular version placed third in the St. Louis region of the 2017 National Homebrew Competition.
Marron el Alce - An attempt to clone Negra Modelo, it ended up darker than I expected. It did place third in the St. Louis region of the 2017 National Homebrew Competition.
And others:
Hawaiian Moose - An American IPA with distinct citrusy/tangerine aroma and flavor, all from the hops.
Hawaiian Moose, NEIPA Style - Same recipe, but with Magnum as the bittering hop, water adjusted to have a lower sulfate/chloride ratio, and hops added at a lower temperature whirlpool, at high krausen during fermentation, and at the end of fermentation. Honestly, I think the original did better.
Bighorn Dunkelweizen - A traditional dunkelweizen. I used Wyeast 3068 (the Weihenstephan Weizen strain), which the last couple of times gave me a lot of banana, no clove. With this beer I tried a ferulic acid rest when mashing (113F). Lo and behold, clove!
